500g caster sugar

For the Cocktail (yields 850ml, serving 10)

Directions

Making the Syrup: Put the listed components in a pot, heat until it reaches a simmer, mixing until the sugar dissolves. Next, take off the stove allowing it to cool completely. Decant into an sterilised bottle, seal and store in the refrigerator, where it will keep for up to one month.

To make Batch Mix: Mix the specified liquids in a large bottle, allow it to infuse for an hour, then filter it best through a fine cloth, to ensure it's fully clarified.

For serving: Pour 85ml from the cocktail base to a cocktail shaker containing ice, and agitate carefully for one minute until cold. Filter into an frosted cocktail glass or a similar vessel, top with the cranberries adding the final touch by giving it a brief mist of mandarin oil over the drink.
